Cuban sandwiches

Every good sandwich starts with bread. So don't go to the supermarket and buy baked dough blanks from Romania or Bulgaria, but follow this recipe for Cuban bread. The specialty is that the bread dough contains lard. There is also a mixed salad and homemade French fries and of course homemade sauces. Except for the cheese, I don't use any processed foods either, only raw materials, which I tell myself how it should taste afterwards. For me, that's what makes the difference. Anyone who tries it will understand what I mean afterwards.


Cuban bread - Pan cubano (click)
1.2 kilos of boneless chicken leg
Olive oil, or rapeseed oil for frying
1 tablespoon of cornstarch to thicken the sauce
200 grams of cheddar
optional pickles

3 oranges = approx. 200 milliliters
50 milliliters of lime juice
1 teaspoon of salt
1/2 teaspoon chilli flakes
6 cloves of garlic
1 tablespoon of oregano
1 hot pepper

French fries:

1.5 kilos of waxy potatoes
1.5 liters of rapeseed oil

Cuban mixed salad (click)

French fries mayonnaise:

200 milliliters of rapeseed oil
1 egg
1 pinch of salt
1 pinch of chilli flakes
1 tablespoon lemon juice
1 tablespoon of vinegar
1 teaspoon of mustard

Sandwich mayonnaise:

200 rapeseed oil
1 egg
1/2 teaspoon salt
q Pinch of chilli flakes
1 tablespoon of vinegar
1 tablespoon of lemon juice
1-2 tablespoons mustard flour (or mustard)
1 tablespoon of honey

The meat should be marinated. I needed it relatively quickly, so I couldn't leave it overnight in the refrigerator, I only had three hours to marinate. If you already know this a few days in advance, you could also make pulled pork, or if you just want to make Cuban sandwiches, you can also buy salami and boiled ham. The imagination knows no limits. Pickles and cheese would also be good if you like both.

Squeeze oranges

Squeeze the limes

50 milliliters are aimed for.

6 cloves of garlic

Put the garlic cloves through the garlic press

Press the garlic into the bowl in which the meat is to be marinated.

Garlic press or chopping with a knife, nothing can do.

Pour the orange juice and lime juice over the garlic

Now a few more spices

1 tablespoon of oregano

Herbs generally only harm those who don't use them.

A pepperoni as folklore is part of my life

All ingredients are now in the marinade.

I bought the boned piece of chicken thigh from my favorite Anna in the Mix Markt Berlin Marzahn. The chicken is really the biggest and most tender there. If you are in Berlin, you should try it out.

Place the chicken in the marinade and then leave to marinate in the refrigerator or outside on the windowsill during the cold season.

We bake the bread in advance if time allows. This goes back to the contact grill before serving, so it doesn't have to be warm when the meat is done later.

Children like French fries and it is not that unlikely in Cuba that there will be delicious French fries with a sandwich. Before my children complain about the sandwich and don't eat anything, I make them a net and a false bottom.

I already make the french fries while the bread is waiting on the baking sheet. They have to be double fried anyway to be crispy. It doesn't matter when you do the first round. That can happen hours in advance. These are really big potatoes and as you can see, I cut the fries by hand. That only frightens those who have never done it themselves. I do it very relaxed and it goes quickly from the hand.

A kilo of potatoes is really no hurdle, not even two.

Heat a liter of rapeseed oil in a wok.

When the oil is bubbling, the french fries soak in the fat in two batches for 11-12 minutes each

This is where the first batch of fat comes back. Then fry the next one right away

The french fries cook on the first oil bath, but are still quite soft on the surface.

Then drain in the sieve and wait until the french fries come back into the hot oil before serving

As a side salad I cut a Cuban mixed salad

I marinate the salad just before eating. I've only preferred the picture for you.

Now the chicken is fried. Heat the oil in the pan

Get the meat out of the marinade

First, put the skin side on the bottom of the pan so that the fat fries out

Fry 4 minutes per side at full throttle on the largest plate.

Turn after four minutes

The skin should be nice and brown

The meat comes out of the pan after a total of 8 minutes.

The marinade comes from the meat in the roasting set

Dissolve one tablespoon of cornstarch in warm water

Mix the cornstarch

In sips, the cornstarch is added to the mixture of roast set and marinade.

This is the meat. Looks nice brown. That’s just done, but it’s supposed to be as tender as butter. A very pronounced meat fiber only prevents this. The meat will cook later in the bound marinade sauce.

Slice meat against the fiber.

The cut meat comes back into the pan, which only gets very low heat from the stove

Meat can cook for 5 minutes, then turn off the stove.

Now the Cuban bread is baked

We also need mayonnaise for the french fries

200 milliliters of rapeseed oil, 1 pinch of salt, 1 pinch of chili flakes, 1 egg, 1 tablespoon of lemon juice, 1 tablespoon of vinegar, 1 teaspoon of mustard

Briefly whip the mayonnaise with the ESGE wand or a hand blender

Then I'll beat the mayonnaise for the sandwiches.

200 milliliters of rapeseed oil, 1 egg, 1 tablespoon of vinegar, 1 tablespoon of lemon juice

salt and pepper

1 - 2 tablespoons of mustard flour. My children always complain about mustard, so I only use one tablespoon. If you like mustard, take two tablespoons of mustard flour.

A tablespoon of honey for a little sweetness in the sandwich mayonnaise

Put your wand or hand blender back into the blender jar.


That tastes great and has no aftertaste like the stuff you bought.

Cut the cheese into thin slices

The bread comes back from the oven

Now we are approaching the finished dish.

Marinate the salad, put the fries in the hot fat again, for 3 to 4 minutes, then they are brown and crispy.

I use my contact grill for the sandwiches. But it also works in the oven, or you don't toast it at all and instead add crispy lettuce and cucumber to the sandwich. The bread is fresh. But I wanted to press the sandwiches briefly on the grill after they were occupied.

Cut open the sandwich

Brush with sandwich mayonnaise

Cover with the meat

Cheddar and Tomatoes

Put on the lid

Place sandwiches in the contact grill

Cover closed

I left the sandwiches in the grill for 10 minutes, if yours is hotter, it can be less

Drain the fries and season with salt

For my children, I cut the sandwiches a bit smaller.

If you like, you can eat French fries with it. The salad is really great with it.

Do you want to know how it tastes? Very cool! It's not like we throw a baguette in the oven. The bread is great, homemade. Spread with a homemade honey mustard mayonnaise. The meat itself is marinated, fried to the point, extremely tender and well seasoned. Cheddar cheese melted nicely, fresh fries with fresh mayonnaise and a crunchy salad. Of course it's work, but nobody will sell you if you don't do it and the moment makes up for EVERYTHING.
