Mon 26.11. Turkey strips with fried egg rice

Turkey strips with fried egg rice

Ingredients for 4 persons:
250 g rice 30 cents
300 g turkey meat 2.40 euros
3 eggs 60 cents
2 tbsp sunflower oil 10 cents
2 tbsp sesame oil 10 cents
2 tablespoons of olive oil 10 cents

Preparation of the turkey strips with fried egg rice:

Put the rice in a measuring cup and add twice the amount of water to a saucepan. Put a pinch of salt in and the lid on the saucepan. When the water starts to boil, remove the lid and cook the rice on medium heat for another 15 minutes. Stir again and again in between. Then switch off the stove and let the residual heat bubble for another 5 minutes.

Let cool for 1 hour.

In the meantime, cut the turkey meat into strips and season with salt and pepper.
Heat the olive oil in a pan and fry the cut putti strips for about 15 minutes.
Then fry the rice in a second pan in hot sunflower oil. Whisk the eggs with the sesame oil in a mixing bowl, mix with the rice and fry briefly until the egg mixture sets.
Finally, season with salt and pepper.

Serve the fried egg rice with the turkey strips on a plate.

Egg fried rice is also often served as a side dish to Chinese dishes.

4 tomatoes

Yogurt sauce

Ingredients for the yogurt sauce:
500 g of pasta
500 g Greek yogurt
½ bunch of fresh parsley
2 cloves of garlic
some salt and pepper

Preparation of the yoghurt sauce:

Peel the garlic and mash it with a garlic press. Finely chop the parsley and mix with the yogurt in a mixing bowl. Season with salt and pepper and let it steep in the refrigerator.

In the meantime we prepare the minced meat:

Peel the onion and cut into small pieces. Heat some olive oil in a pan and fry the onion pieces until translucent, add the minced meat and fry until crumbly. Add the tomato paste and roast. Now stir in the canned tomatoes.
Cut the carrots into small slices, move the minced meat to one side in the pan, sauté the carrots briefly and stir in the minced meat.

Season with salt, pepper, paprika and caraway seeds to taste. Cover and simmer on a low heat.

In the meantime, cook the pasta in a saucepan with salted water for 7 to 8 minutes.

Serve the pasta with the minced meat and yogurt sauce.

are a German dish made from pasta, ham and, depending on the recipe, cream, egg and cheese. Grandma always made the cheap option without cheese.

Ingredients for 4 persons:
500 g pasta (fusilli) 50 cents
120 g ham 1 euro
1 onion 10 cents
1 pinch of marjoram
1 clove of garlic 5 cents
some oil to fry 5 cents
1 pinch of salt and pepper

Preparation of the ham noodles:

Bring salted water to the boil in a large saucepan, add the pasta and cook until al dente (7 to 8 minutes). Then strain with a pasta strainer.

In the meantime, peel and chop the onion and mash the garlic clove.
Then let the oil get hot in a pan and roast the onion pieces and the garlic pieces in them until translucent.
Cut the ham into small pieces and roast for 1 to 2 minutes. Then mix in the pasta and season with salt, pepper and marjoram.
Then serve with a green salad.

Potato-spinach gratin

500 g potato
1 small onion
1 garlic
200 g spinach leaves (defrosted)
1 sachet base for potato gratin
200 g ricotta
1 tbsp butter
50 g grated Gouda cheese

This is how the potato spinach casserole is made:

Grease the small baking dish with butter.

Peel the potato and cut into slices approx. 3 mm thick. Peel and chop the onion. Press the garlic with a garlic press.

Mix the base for the potato gratin with 1/4 l water, add the potatoes, onions, garlic and spinach and bring to the boil while stirring. Add half of the ricotta and stir for another 1 minute.

Spread half of the mixture in the mold, place the remaining ricotta and Gouda cheese on top. Pour the rest of the mixture into the mold and bake for 40 minutes in an oven preheated to 200 °. Let rest briefly before serving the delicious potato spinach casserole.

Sun 01.12. Grandma's famous leftover pan

On Sunday we make a leftover pan out of everything left over from the week, it costs almost nothing!
Today there is the simplest leftover pan with small potato cubes, bacon, onion and egg.

Preparation of the leftover pan:

Wash the potatoes, peel them, boil them in a saucepan, let them cool and cut them into slices. Cut the bacon into small cubes. Cut the onion into fine rings.

Heat the oil in a pan. Put the bacon cubes and potato slices in the hot oil, fry for 2 minutes and cover with a lid. Set the stove to medium heat and fry for 12 minutes. Don't forget to stir occasionally.

Then season the potatoes and bacon with salt and pepper, add finely chopped tomatoes and the onion rings and fry again with the lid on for 2 minutes on a low heat.

In the meantime, beat the eggs in a second pan heated with oil and fry them briefly.

Then arrange the potatoes with bacon on a plate, sprinkle the fried eggs on top and sprinkle with finely chopped chives.
