How to cook tender corned beef

My husband can - Wednesday pasta - cook with canned supplies: pasta with a hearty corned beef sauce


Usually fresh cooking is done in the house of the Markgräfläflerin, but we always have a few supplies in the house for possible emergencies and that long before Covid-19! This is particularly important to us in winter - during the cold season. Who wants to go shopping with a sniff nose? So it's good to have some supplies.

According to the recommendation of the Federal Office for Civil Protection and Disaster Relief, every person should have emergency food supplies at home for two weeks. We can't quite do that, unless you include the wine cellar, which is mandatory for the Markgräflerland.

In addition to pasta and rice, we naturally have a few canned supplies. From time to time you have to look at the expiration date.

Tip: Buy supplies with a time lag so you don't have to use everything at once. With long-life milk, for example, we have to use up a tetra pack every six to eight weeks, which usually means pudding or rice pudding.

Today is Can Day for us, a can of corned beef is due to be consumed and replaced: My husband tried the recipe from the corned beef pack. There is “noodles with a hearty corned beef sauce”. Actually a classic “camping recipe”. The recipe is quite "simple" or undemanding. The Markgräfler has therefore refined it a little, used broth instead of water and added tomato paste, carrots, cocktail tomatoes and Italian herbs.

If necessary - in other words: if there are no fresh ones - the tomatoes come from the can, of course.



Pasta with a hearty corned beef sauce


ingredients
(for 2 people)

according to the recipe on the packaging:
• 250 g of pasta
• 1 can of corned beef (340g)
• 1 small onion
• 1 clove of garlic
• Butter
• 200 ml of water
• Salt
• Pepper
• parsley (or basil)

Our complement
• 1 teaspoon of grained vegetable broth
• 1 strip of tomato paste
• 1 handful of cocktail tomatoes
• 1 carrot
• 1 teaspoon of Italian herb mixture
• grated cheese

preparation

Cook the pasta in salted water according to the package instructions until al dente. Then drain the pasta

In the meantime, peel and dice a small onion. Peel and dice the garlic or press through the garlic press.

Peel and dice the carrot, wash and dice the cocktail tomatoes.

Sauté the onions and garlic in a saucepan with butter. Add the diced carrots and a strip of tomato paste and sauté. Dissolve the vegetable stock in about 200 ml of hot water and add to the pot with the corned beef. Chop the corned beef with a wooden spoon and bring to the boil briefly. Add the quartered tomatoes and season with black pepper and the Italian herb mixture.

Then arrange the pasta with corned beef sauce on a plate, sprinkle with grated cheese and garnish with parsley or basil.



Pasta with spicy corned beef sauce


Ingredients
(for 2 people)

according to the recipe on the package

250 g pasta
1 can corned beef (340g)
1 small onion
1 clove of garlic
butter
200 ml water
Salt
Pepper
Parsley (or basil)

plus (our supplement)

1 teaspoon granulated vegetable stock
1 strip of tomato paste
handful of cocktail tomatoes
1 carrot
1 teaspoon Italian herb mixture
grated cheese

Preparation

Cook the pasta in salted water according to the instructions on the packet until al dente and drain.

In the meantime, peel and chop a small onion. Peel and dice the garlic or press it through the garlic press.

Peel and dice the carrot, wash and dice the cocktail tomatoes.

Fry onions and garlic in a pan with butter. Add the carrot cubes and a strip of tomato puree and sauté. Dissolve the vegetable broth in about 200 ml hot water and add to corned beef in the pot. Crush the corned beef with a spoon and bring to the boil briefly. Add the quartered tomatoes and season with black pepper and Italian herbs.

Then arrange the pasta with the corned beef sauce on a plate, sprinkle with grated cheese and garnish with parsley.
