Baked Beans with Fried Eggs - English Breakfast

Baked beans are the classic English breakfast!

Beans baked in tomato sauce make a filling breakfast. The combination with green beans and potatoes makes it a nice meal, the 4 fried eggs top it all off.

Ingredients for baked beans with fried eggs (for 4 people):

300 g large white beans (canned)
100 g green beans
1 onion
1 clove of garlic
2 waxy potatoes
1 can of tomatoes (in pieces)
4 eggs
1 teaspoon clarified butter
salt and pepper
fresh herbs at will

Preparation of baked beans with fried eggs:

Peel the onions and cut into small cubes. Peel the garlic clove and cut into fine slices. Wash green beans and cut off the ends of the stems. Peel the potatoes and cut into small cubes. Place canned broad white beans in a colander, rinse with cold water and drain. Wash, drain and finely chop herbs.

Heat the clarified butter in a sufficiently large pan. Fry the potatoes and onions in it, add green beans and fry everything for 3-5 minutes over low to medium heat. Add the tomato pieces, beans and garlic and bake everything for about 15 minutes in a preheated oven at 160 degrees, until the potatoes and green beans are firm to the bite.

Increase the oven temperature to 200 degrees. Carefully crack the eggs over the pan and place them side by side in the beans. Bake in the oven for another 10-15 minutes until the eggs set. Sprinkle with herbs and serve immediately.
